chore: switch to GHCR image in docker-compose, remove dokploy webhook

- docker-compose.yml now uses pre-built ghcr.io image instead of build
- ORIGIN is configurable via env var for deployment
- Remove deploy job from release workflow (Dokploy pulls compose from repo)
