Move docker-compose version pinning from release script to the release
workflow so it runs after the image is pushed to GHCR. Dokploy will
always find the referenced image.

Add scripts/release.sh that infers bump type from conventional commits
(major/minor/patch), bumps package.json, commits, tags, and pushes.
Includes safety checks for branch, clean tree, and remote sync.
Also adds a workflow_dispatch GitHub Actions workflow (bump.yml) and
Makefile targets (release, release-patch, release-minor, release-major).

Move the Dokploy webhook into a separate deploy job that depends on
the release job, ensuring the image is fully pushed before redeploying.

Replace generic registry secrets with ghcr.io using the built-in
GITHUB_TOKEN. Use docker/metadata-action for automatic semver tagging.
